WINE-MAKING PROCESS:
After destemming, grapes are softly squeezed and the resulting must is separated from the skins by means of pneumatic presses and then it undergoes a static decanting for 24 hours, correctly protected from oxidation, until it reaches the expected clearness degree. Then it is time for fermentation in small stainless steel tanks under a controlled temperature of 16º C.
CHECKING NOTES:
Clear aspect, good effervescence and continuous lasting, fine and multiple bubbles. Elegant and fine aroma, with fruity notes and good aromatic expression. Fresh wrapping and harmonic taste, good acidity balance.

Pinkish and lasting foam, aroma and fruity flavour with a slight vegetal note to be highlighted. A fruity fresh and correct sparkling wine.

Fine and elegant bubbles, exuberant, floral and exotic fruity flavour reminding lychees. When temperature rises, it can get slightly cloying, but even so it is different and that is precisely its value. Fresh, soft and desirable taste.

HOW TO SERVE:
Ideal to serve with salads, roast suckling pig, fish and seafood, or just as an appetizer. It must be served fresh in a Champagne-flute, at a temperature between 6-8ºC.
